1. Basic Function & Scope

The Food & Beverage Manager is responsible for overseeing the entire food and beverage operations within the hotel, ensuring the highest standards of quality and service. This role involves managing staff, inventory, budgets, and customer satisfaction across all dining areas, including restaurants, bars, room service, and banqueting facilities.

Internal: Works closely with the Hotel Manager and maintains close relations with all departments.

External: Maintains good relationships with guests and other business-related partners.

4. Supervisory Responsibility

Responsible for the overall management of food and beverage activities, providing excellent customer service and addressing any queries or complaints.

  1. Supervise day-to-day operations of all food and beverage outlets within the hotel (restaurants, bars, room service, and banquet facilities).

  2. Ensure that all food and beverage services are delivered in a timely, efficient, and professional manner.

  3. Develop and maintain efficient systems for inventory management, food preparation, and quality control.

  4. Monitor guest satisfaction and resolve any service or quality issues promptly.

  5. Recruit, train, and supervise food and beverage staff, including chefs, servers, bartenders, and other related roles.

  6. Create a positive and supportive working environment, fostering teamwork and professional growth.

  7. Conduct regular performance evaluations and provide feedback to staff, implementing training programs as needed.

  8. Ensure that all team members understand and follow service standards, health codes, and safety protocols.

  9. Collaborate with chefs and culinary teams to design and update menus that meet guest preferences and seasonal trends.

  10. Ensure that menus are balanced, cost-effective, and aligned with the hotel's brand and target market.

  11. Introduce new offerings and promotions to attract guests and increase sales.

  12. Monitor the quality of food and beverage offerings to ensure they meet established standards.

  13. Develop and manage the food and beverage department budget, ensuring cost control and maximising profitability.

  14. Monitor food and beverage costs, including inventory, labour, and procurement, ensuring that expenses stay within budget.

  15. Implement cost-control measures and strategies to increase revenue without compromising service quality.

  16. Prepare regular financial reports and provide insights to senior management.

  17. Ensure the highest level of guest satisfaction by maintaining consistent quality, service standards, and overall experience.

  18. Actively solicit guest feedback through surveys, online reviews, and direct communication to identify areas for improvement.

  19. Handle guest complaints or concerns effectively and professionally, ensuring quick and satisfactory resolutions.

  20. Ensure the food and beverage department complies with all local health, safety, and sanitation regulations.

  21. Maintain up-to-date knowledge of industry trends, food safety regulations, and licensing requirements.

  22. Train staff on proper food handling, sanitation, and safety protocols to ensure a safe working environment.

  23. Perform regular inspections of food preparation areas, kitchen equipment, and dining spaces to ensure cleanliness and safety.

  24. Work closely with the sales and marketing team to promote the hotel's food and beverage offerings through various channels.

  25. Develop and implement promotional campaigns, events, and special offers to attract guests to dining outlets.

  26. Build relationships with local vendors and suppliers to enhance the food and beverage offering.
